I don’t know about your family, but mine is ALWAYS thirsty.  We stopped buying soda a couple of years ago in an effort to 1.) encourage healthier beverage choices, and 2.) reign in our ridiculously high grocery budget. After the “soda strike” I found myself buying way too many sports drinks.  While these are a slightly healthier option than soda, they are not such a great choice for the budget.  My family can go through an 8-pack of sports drinks in one weekend and that stuff is expensive!  I knew there had to be a better way but I had no idea what the better way would be until I stumbled upon this post at “One Good Thing by Jillee”.

6 Days of Sweet Tea – the EASY way!

If you’re lucky enough to live in the South, every day is a great day for Sweet Tea.  My heart breaks for the rest of you who must endure the harsh cold.  I’m sure the Winter months are probably not very conducive to drinking your sweet tea up North.  Bless your little hearts!  😉 Take heart though, Spring is almost here even for the northernmost states of this country and that means Sweet Tea Season for sure!  Yippee!!

Now, I don’t know about you, but sometimes I get prone to a bad case of the lazies.  Especially on those HOT Summer days when all I want to do is sit in the shade and sip my iced tea.  So I found a super easy solution that let’s me have sweet tea ready at a moment’s notice.  I love it and frankly, I can’t imagine what I ever did without this neat little trick.  The secret?  Sweet Tea Base!!

I’m sure ya’ll have seen those cartons in the grocery store of iced tea concentrate.  Have you seen the price on those?  WOW!!  Making your own tea base is going to save you a TON of money, especially if your family is like mine and Can’t. Get. Enough. ice-cold sweet tea. Continue Reading

It’s Mardi Gras! Let’s Gumbo!

While visiting my Dad a while back, I saw a cooking show giving detailed steps to make an authentic tasting gumbo without all the work.  Now, don’t get me wrong, it still takes a while but it is seriously less actual “in the kitchen” time than a traditional gumbo so I wanted to share it with you.  This post will have a few more photos than ya’ll are used to coming from me, but I wanted to make sure and give you visuals so here goes.

Let’s get started with some Ingredients:

¾ cup + 1 Tbsp all-purpose flour
½ cup vegetable oil (I used bacon grease)
Salt and pepper
1 onion, chopped fine
1 green bell pepper, seeded and chopped
1 celery rib, chopped fine
5 garlic cloves, minced
1 tsp minced fresh thyme (I used 1/2 tsp dried)

Homemade Hamburger Buns in 40 minutes!

I don’t know what it is, maybe it’s Spring fever, but I’ve seen quite a few people posting pictures of mouth-watering hamburgers on Facebook the last few days and Goodness ME do they look good.  I’ve been drooling for days over those pictures, so I decided to make my own this weekend.  It’s really very simple.  Even if you’ve never made your own bread before, don’t be intimidated; these are practically fail-proof.

Slow-Cooker Southwest Chicken Soup (w/bonus cornbread muffin recipe)

I think Spring has finally arrived here in Houston, TX (I hope); but I see on the news that a bunch of you are still in the grips of Winter’s cold and unrelenting fingers so I thought I’d share a hearty and delicious dinner that will warm you up body and soul.  Umm – can you tell I love this soup?  Hehe.

I started out making a cheesy chicken crock-pot recipe that I saw online, but as I was gathering ingredients I thought cheese in the crock pot didn’t really sound like that great of a plan – so I just ran with it my creative juices and came up with this.  It was REALLY tasty.  I also baked a batch of Bacon-Jalapeno Cornbread muffins to go along with it.  I thought they were great, the rest of my people weren’t so convinced (darn cornbread haters – lol) but I’m going to share that recipe too, just in case you love cornbread and want to try them for yourself.  🙂 Continue Reading
